Crafted from an 80% Cinsault and 20% Syrah blend, this rosé stands as the pioneering estate pet-nat. Derived from meticulously tended, certified-organic vines on the northwestern fringes of the historic city of Nîmes and just to the south of the Cévennes mountain range, this wine embodies a harmonious fusion of nature's bounty.
The vineyards, boasting an age range of 10 to 30 years, are thoughtfully nestled in a tapestry of clay-limestone soils with an eastward orientation. The gentle undulations of the terrain, varying from flat to moderately hilly, are encompassed by the fragrant embrace of garrigue and woods, imparting a sense of rustic charm.
Following a careful direct-pressing of the grape clusters, native yeasts initiate fermentation within cement tanks, and this transformative process occurs sans sulfur. Bottling takes place while the fermentation is still in progress, resulting in a final alcohol content under 11% (10.4% for the vintage of 2022). This wine's purity is unadulterated, as it is neither filtered nor exposed to sulfites, and it is sealed with a crown cap.
